I like number 2. You can do a lot with accent colors that pop! But trust yourself on this one. You have a good eye.

Option 1, all pink walls.
Option 2, leave the walls a neutral tan color and either paint the wall behind the crib a bright pink (baby's signature color) or create a custom art piece that is large and full of color.
